Ingredients

2 cups plain Greek yogurt

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

1/2 cup strawberries, diced

1/2 cup blueberries

1/2 cup kiwi, diced

1/4 cup shredded coconut, unsweetened

1/4 cup mini chocolate chips (optional)

1/4 cup chopped nuts (almonds, walnuts, or pistachios) (optional)

Parchment paper

Instructions

Prepare the Base: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until well blended and smooth.

Line the Baking Sheet: Place a large piece of parchment paper onto a baking sheet, allowing some excess to hang over the edges for easy removal later.

Spread the Yogurt Mixture: Pour the yogurt mixture onto the prepared baking sheet. Use a spatula to spread it evenly into a rectangle, about 1/4 inch thick.

Add the Toppings: Sprinkle the diced strawberries, blueberries, and kiwi evenly over the yogurt layer. If desired, add shredded coconut, mini chocolate chips, and chopped nuts for additional texture and flavor.

Freeze: Place the baking sheet in the freezer and let the yogurt bark freeze for at least 4 hours, or until it is completely solid.

Break into Pieces: Once frozen, remove the yogurt bark from the freezer. Lift it out of the baking sheet using the edges of the parchment paper. Break it into irregular pieces using your hands or a knife.

Store or Serve: Enjoy immediately or store the pieces in an airtight container in the freezer for up to 2 weeks.
