Ingredients

2 cups Greek yogurt (plain or vanilla)

1 cup fresh or frozen raspberries

¼ cup honey or maple syrup (adjust to taste)

¼ cup chia seeds

1 teaspoon vanilla extract

½ teaspoon lemon juice (optional, for brightness)

Pinch of salt

Fresh raspberries for topping (optional)

Dark chocolate chips or shavings for garnish (optional)

Instructions

Prepare the Mixture: In a large mixing bowl, combine Greek yogurt, honey (or maple syrup), vanilla extract, lemon juice, and a pinch of salt. Whisk until smooth and well-blended.

Add Chia and Raspberries: Fold in the chia seeds and raspberries gently to maintain some raspberry chunks. Ensure the chia seeds are evenly distributed throughout the mixture.

Blend for Smoothness (optional): If you prefer a smoother texture, you can blend the mixture using an immersion blender or a regular blender for a few seconds, but be careful to not over-blend completely.

Pour into Baking Dish: Line a small baking dish (approximately 8x8 inches) with parchment paper, leaving some overhang for easy removal. Pour the yogurt mixture into the prepared dish and spread evenly.

Top It Off: If desired, sprinkle additional fresh raspberries and dark chocolate chips on top for added flavor and presentation.

Freeze: Cover the dish with plastic wrap or aluminum foil and place it in the freezer. Freeze for at least 4-6 hours or until completely solid.

Slice and Serve: Once frozen, remove the dish from the freezer and lift the bars out using the parchment paper overhang. Allow to sit for a few minutes at room temperature to soften slightly, then slice into bars.

Enjoy: Serve immediately, or store extras in an airtight container in the freezer. For best results, consume within a few weeks.
