Ingredients

2 cups Greek yogurt (plain or vanilla)

1 cup fresh strawberries, hulled and diced

1 cup fresh kiwis, peeled and diced

1/2 cup honey or maple syrup

1 teaspoon vanilla extract

1 tablespoon lemon juice

1/4 cup chopped nuts (optional, for added crunch)

A pinch of salt

Instructions

Prepare Ingredients: Start by washing, hulling, and dicing the strawberries and kiwis. Set them aside in separate bowls.

Mix the Yogurt Base: In a large bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, lemon juice, and a pinch of salt. Whisk until smooth and well combined.

Fold in the Fruits: Gently fold in the diced strawberries and kiwis into the yogurt mixture. If desired, add in the chopped nuts for extra texture and crunch.

Prepare the Pan: Line an 8x8 inch (20x20 cm) square baking dish with parchment paper, leaving some overhang for easy removal later.

Spread the Mixture: Pour the yogurt and fruit mixture into the lined baking dish. Use a spatula to spread it evenly across the pan.

Freeze: Cover the dish with plastic wrap or foil and place it in the freezer. Allow the mixture to freeze for at least 4-6 hours or until solid.

Cut into Squares: Once frozen, remove the baking dish from the freezer. Use the overhanging parchment paper to lift the frozen yogurt block out of the dish. Place it on a cutting board and cut into squares.

Serve: Serve immediately or store the squares in an airtight container in the freezer for up to a month. Enjoy your refreshing treat on a hot day!
