Ingredients

1 lb shrimp, peeled and deveined

1 cup Arborio rice (or long-grain rice)

4 cups chicken broth (or vegetable broth)

4 tablespoons unsalted butter

4 cloves garlic, minced

1 cup freshly grated Parmesan cheese

1 cup frozen peas (optional)

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Juice of 1 lemon

Instructions

Prep the Shrimp: Pat the shrimp dry with paper towels and season with salt, pepper, and red pepper flakes. Set aside.

Cook the Rice: In a large skillet or heavy-bottomed pan, melt 2 tablespoons of butter over medium heat. Add the Arborio rice and toast for 2-3 minutes until slightly golden, stirring frequently.

Add Garlic: Stir in the minced garlic and cook for about 1 minute until fragrant.

Incorporate Broth: Pour in the chicken broth, bringing the mixture to a gentle simmer. Stir occasionally and cook for about 15-20 minutes, until the rice is creamy and has absorbed most of the liquid.

Cook the Shrimp: In a separate large skillet, melt the remaining 2 tablespoons of butter over medium-high heat. Add the seasoned shrimp and sauté for 2-3 minutes on each side until pink and opaque. Remove the shrimp from the skillet and set aside.

Combine Flavors: Once the rice is tender, stir in the cooked shrimp, frozen peas (if using), and grated Parmesan cheese. Mix well until the cheese melts and combines. Adjust seasoning with more salt, pepper, and red pepper flakes if desired.

Finish with Lemon: Squeeze the juice of one lemon over the rice and shrimp mixture for brightness and mix thoroughly.

Serve: Garnish with chopped fresh parsley and serve immediately, enjoying the creamy, garlicky goodness!
