Ingredients

8 oz rice noodles

1 lb large shrimp, peeled and deveined

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons soy sauce

1 tablespoon lime juice

1 tablespoon honey

1 teaspoon red pepper flakes (adjust to taste)

3 green onions, sliced

1 cup snap peas, trimmed

1 cup bell peppers, thinly sliced (any color)

Salt and pepper, to taste

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions

Cook the Noodles:

Begin by cooking the rice noodles according to the package instructions. Once cooked, drain and set aside.

      Prepare the Garlic Butter Sauce:

In a large skillet over medium heat, melt the butter. Add in the minced garlic and grated ginger, sauté for about 1-2 minutes until fragrant and golden.

          Add the Shrimp:

Increase the heat to medium-high, add the shrimp to the skillet, and cook for approximately 2-3 minutes on each side until the shrimp turn pink and opaque. Season with salt, pepper, and red pepper flakes.

              Incorporate the Veggies:

Toss in the snap peas and bell peppers. Sauté everything together for an additional 2-3 minutes until the vegetables are tender but still crisp.

                  Finalize the Sauce:

Lower the heat slightly and add the soy sauce, lime juice, and honey to the skillet. Stir well to combine the flavors and allow the sauce to cook for an additional minute.

                      Combine with Noodles:

Add the drained rice noodles into the skillet, tossing to ensure they are coated in the garlic butter sauce. Cook for another minute or two until the noodles are heated through.

                          Serve:

Divide the Garlic Butter Shrimp Noodles among serving bowls. Garnish with sliced green onions and fresh cilantro. Serve with lime wedges on the side for an extra zing.
