2 medium zucchinis, sliced into ½-inch rounds

½ cup grated Parmesan cheese

½ cup breadcrumbs (panko for extra crunch)

2 cloves garlic, minced

½ teaspoon smoked paprika (optional)

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare the Zucchini: Slice the zucchinis into ½-inch thick rounds and place them in a bowl. Lightly sprinkle with salt and let them sit for about 10 minutes to draw out moisture. Pat them dry with a paper towel to prevent sogginess.

      Mix Coating: In a separate bowl, combine the grated Parmesan, breadcrumbs, minced garlic, Italian seasoning, smoked paprika, salt, and pepper. Mix well until all the dry ingredients are evenly combined.
