Garlic Shrimp with Zoodles

Ingredients
  

1 lb large shrimp, peeled and deveined

4 medium zucchini, spiralized into zoodles

4 cloves garlic, minced

1/4 cup cherry tomatoes, halved

1/4 cup fresh basil, chopped

1/4 cup grated Parmesan cheese

1/4 tsp red pepper flakes (adjust to taste)

3 tbsp olive oil

Salt and black pepper to taste

Juice of 1 lemon

Instructions
 

Prep the Zoodles: Start by spiralizing your zucchini into zoodles using a spiralizer or a julienne peeler. Set aside.

    Sauté the Shrimp: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Once hot, add the minced garlic and sauté for about 30 seconds, until fragrant.

      Add Shrimp: Add the shrimp to the skillet. Season with salt, black pepper, and red pepper flakes. Cook for about 2-3 minutes or until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.

        Cook Zoodles: In the same skillet, add the remaining tablespoon of olive oil. Toss in the zoodles and cherry tomatoes. Sauté over medium heat for 2-3 minutes until just tender, but still al dente.

          Combine Everything: Lower the heat and return the shrimp to the skillet. Add the lemon juice and half of the fresh basil. Toss gently to combine and heat everything through.

            Serve: Remove from heat and sprinkle with Parmesan cheese and the remaining basil on top. Serve immediately and enjoy your garlicky delight!
