Ingredients

2 cups fresh corn kernels (about 3-4 ears of corn) or frozen corn (thawed)

1 cup all-purpose flour

1/2 cup cornmeal

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/2 tsp black pepper

1/4 tsp paprika (optional for a little extra kick)

2 large eggs

1/2 cup buttermilk (or milk with 1 tsp vinegar added)

1/4 cup finely chopped green onions (scallions)

1/4 cup fresh cilantro leaves, chopped (optional)

Oil for frying (canola or vegetable oil)

Maple Butter:

1/2 cup unsalted butter, softened

1/4 cup pure maple syrup

A pinch of sea salt

Instructions

Prepare the Maple Butter: In a medium bowl, combine softened butter, maple syrup, and a pinch of sea salt. Mix well until creamy and fully incorporated. Transfer to a small serving dish and refrigerate it while you prepare the corn fritters.

Make the Fritter Batter: In a large bowl, whisk together flour, cornmeal, baking powder, baking soda, salt, black pepper, and paprika. In another bowl, beat the eggs and mix them with the buttermilk. Add the fresh corn, green onions, and cilantro (if using) to the egg mixture.

Combine Wet and Dry: Pour the wet ingredients into the bowl of dry ingredients. Gently fold everything together until just combined; be careful not to overmix—the batter should have a few lumps.

Heat the Oil: In a large skillet or frying pan, heat about 1/4 inch of oil over medium heat. Test if the oil is hot enough by dropping a small amount of batter into the oil; it should sizzle upon contact.

Fry the Fritters: Using a spoon or small ice cream scoop, drop spoonfuls of the batter into the hot oil. Don't overcrowd the pan; cook in batches if necessary. Fry for about 2-3 minutes per side, or until golden brown and crispy. Remove the fritters from the pan and drain them on paper towels.

Serve: Serve the golden corn fritters warm with a generous dollop of maple butter on top. You can also offer extra maple syrup on the side for drizzling.
