Golden Crispy Onion Bhajis

2 large onions, thinly sliced

1 cup chickpea flour (besan)

2 tablespoons rice flour

1 teaspoon cumin seeds

1 teaspoon coriander powder

1 teaspoon garam masala

½ teaspoon turmeric powder

½ teaspoon red chili powder (adjust to taste)

Salt to taste

1-2 green chilies, finely chopped (optional)

Fresh cilantro, chopped (a handful)

Water, as needed

Oil for deep frying

Prepare the Onions: Place the thinly sliced onions in a large mixing bowl. Sprinkle a pinch of salt over them and mix well. Let them sit for about 15 minutes. This will draw out excess moisture and sweetness from the onions.

    Make the Batter: In another bowl, combine chickpea flour, rice flour, cumin seeds, coriander powder, garam masala, turmeric powder, red chili powder, and salt. Mix well to combine all the dry ingredients.

      Combine: Add the chopped green chilies and cilantro to the onions. Mix in the dry spice mixture. Gradually add water a tablespoon at a time, mixing until the onion mixture is well-coated but not too soupy. It should be a thick batter that clings to the onions.

        Heat the Oil: In a deep frying pan, heat enough oil over medium-high heat for deep frying. You can test if the oil is ready by dropping a small amount of batter; it should sizzle and rise to the surface.

          Fry the Bhajis: Once the oil is hot, carefully drop spoonfuls of the onion mixture into the oil. Fry in batches to avoid overcrowding. Cook until they turn golden brown and crispy, about 4-5 minutes, turning occasionally to ensure even cooking.

            Drain: Use a slotted spoon to remove the bhajis from the oil and drain them on paper towels to absorb excess oil.

              Serve: Serve the Golden Crispy Onion Bhajis hot with mint chutney, tamarind sauce, or your favorite dip.
