Greek Quinoa Salad Jars

1 cup quinoa, rinsed

2 cups vegetable broth

1 cup cucumbers, diced

1 cup cherry tomatoes, halved

1/2 cup red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup fresh mint, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes or until quinoa is fluffy and liquid is absorbed. Remove from heat and let it cool.

    Prepare the Jar Ingredients: While the quinoa is cooling, prepare your vegetables. Dice the cucumbers, halve the cherry tomatoes, chop the red onion, and slice the Kalamata olives.

      Mix the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined.

        Layer the Jars: Once the quinoa has cooled, start layering the ingredients into the jars. Begin with a layer of quinoa, followed by cucumbers, cherry tomatoes, red onion, olives, feta cheese, parsley, and mint.

          Repeat Layers: Continue layering until all ingredients are used, finishing with feta on the top for a colorful presentation.

            Add Dressing: Drizzle the prepared dressing evenly through each jar. If you’d prefer to keep the dressing separate until serving, you can store it in small containers.

              Seal and Store: Seal the jars tightly and store in the refrigerator. This salad can be enjoyed immediately or stored for up to 5 days.
