3 medium zucchinis, grated

1 teaspoon salt

1 cup all-purpose flour

1/2 cup grated feta cheese

1/2 cup chopped fresh dill (or 1 tablespoon dried dill)

2 large eggs

3 green onions, thinly sliced

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

Olive oil (for frying)

Tzatziki sauce (for serving)

Prep the Zucchini: Grate the zucchinis and place them in a large bowl. Sprinkle with salt and let sit for about 10 minutes to draw out excess moisture. After 10 minutes, use a clean kitchen towel or cheesecloth to squeeze out the moisture from the zucchini. This step is crucial for crispy fritters.

    Mix the Batter: In a separate bowl, combine the drained zucchini, flour, feta cheese, dill, eggs, green onions, black pepper, and garlic powder. Mix well until all ingredients are evenly blended. The mixture should be thick but not overly stiff; adjust with a bit more flour if necessary.

      Heat the Oil: In a large skillet, heat about 1/4 inch of olive oil over medium heat. You can test if the oil is hot enough by dropping a small spoonful of the batter into the oil; if it sizzles, the oil is ready.
