Ingredients

4 large eggs

4 small flour tortillas (8-inch)

1 cup fresh spinach, chopped

1/2 cup green bell pepper, diced

1/2 cup onion, diced

1/2 cup green chili peppers, diced (mild or hot, based on preference)

1/2 cup shredded cheddar cheese

1/4 cup sour cream

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro, for garnish (optional)

Salsa, for serving (optional)

Instructions

Prepare the Vegetables: Begin by heating the olive oil in a large skillet over medium heat. Add the diced onions and bell peppers, sautéing for about 3-4 minutes until they start to soften. Then, stir in the green chilies and continue to sauté for another 1-2 minutes.

Cook the Spinach: Add the chopped spinach to the skillet and cook until wilted, about 1 minute. Season the mixture with salt and pepper. Once done, remove the skillet from heat and set aside.

Whisk the Eggs: In a separate bowl, crack the eggs and whisk them until well combined. Season with a pinch of salt and pepper.

Scramble the Eggs: In a clean skillet, pour in the whisked eggs, and cook over medium-low heat, stirring gently. When the eggs are about halfway set, incorporate the sautéed vegetable mixture and continue cooking until the eggs are fully set, but still soft and fluffy.

Add Cheese: Sprinkle the shredded cheddar cheese over the egg mixture and cover the skillet with a lid for a minute to allow the cheese to melt.

Assemble the Burritos: Warm the flour tortillas in another skillet or microwave until pliable. Place a generous scoop of the egg and vegetable mixture in the center of each tortilla. Top with a dollop of sour cream.

Wrap It Up: Fold in the sides of the tortilla, then roll from the bottom up, enclosing the filling tightly. Repeat with the remaining tortillas.

Final Toast (Optional): For an extra crispy tortilla, you can place the wrapped burritos seam-side down in the skillet over medium heat for 2-3 minutes until golden brown.

Serve: Cut the burritos in half, garnish with fresh cilantro if desired, and serve with salsa on the side.
