8 oz elbow macaroni

2 cups shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

2 cups milk (whole or 2%)

1/4 cup unsalted butter

1/4 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (adjust for spice preference)

1 can (4 oz) diced green chilies (mild or hot, based on preference)

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup panko breadcrumbs

2 tablespoons fresh cilantro, chopped (for garnish, optional)

Instructions
 

Cook the Macaroni: In a large pot of boiling salted water, cook the elbow macaroni according to package directions until al dente. Drain and set aside.

    Make the Cheese Sauce: In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1-2 minutes until lightly golden to form a roux. Gradually whisk in the milk, ensuring no lumps remain. Continue cooking, stirring frequently, until the mixture thickens (about 5-7 minutes).

      Season the Sauce: Stir in the garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper. Remove from heat and gradually add the shredded cheddar cheese and Monterey Jack, stirring until melted and fully combined.

        Combine Macaroni and Sauce: In a large mixing bowl, combine the cooked macaroni and the cheese sauce. Mix in the diced green chilies until evenly distributed.

          Prepare for Baking: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish or individual ramekins (for single servings). Pour the mac and cheese mixture into the prepared dish, spreading evenly.

            Add Panko Topping: In a small bowl, mix the panko breadcrumbs with a little melted butter (about 1 tablespoon) for extra flavor and crunch. Sprinkle the breadcrumb mixture evenly over the top of the mac and cheese.

              Bake: Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and crispy.

                Serve: Let cool for a few minutes before serving. Garnish with chopped fresh cilantro if desired, for a pop of color and flavor.
