1 medium pizza dough (store-bought or homemade)

1 cup cooked chicken, shredded (preferably grilled or rotisserie)

1 cup BBQ sauce (your favorite brand)

1 ½ cups mozzarella cheese, shredded

½ cup red onion, thinly sliced

½ cup sweet corn, canned or cooked

¼ cup fresh cilantro, chopped (for garnish)

1 tablespoon olive oil

½ teaspoon garlic powder

½ teaspoon smoked paprika

Salt and pepper, to taste

Instructions
 

Prepare the Grill: Preheat your grill to medium-high heat, around 400°F (200°C). If using charcoal, allow the coals to turn gray and heat up.

    Mix the BBQ Chicken: In a bowl, combine the shredded chicken with half of the BBQ sauce. Stir until the chicken is fully coated.

      Roll Out the Dough: On a floured surface, roll out the pizza dough to your desired thickness (about ½ inch thick for a nice crust).

        Shape the Pizza: Transfer the rolled-out dough onto a lightly greased pizza stone or a grill-safe pizza pan. Brush the top of the dough with a little olive oil to prevent sticking.

          Pre-Cook the Crust: Place the crust on the preheated grill. Close the grill lid and cook for about 4-5 minutes or until the bottom is golden and crispy. Keep a close eye to avoid burning.

            Add the Toppings: Once the crust is golden, flip it carefully. Spread the remaining BBQ sauce evenly over the crust. Top with the BBQ chicken mix, followed by the mozzarella cheese, sliced red onions, and sweet corn.

              Melt the Cheese: Close the grill lid again and grill for another 5-7 minutes, or until the cheese is melted and bubbly.
