1 lb boneless, skinless chicken breasts

2 tbsp olive oil

1 tbsp lime juice

1 tsp chili powder

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

For the Bowl:

2 cups cooked brown rice (or quinoa)

1 cup black beans (rinsed and drained)

1 cup corn (fresh or frozen)

1 avocado, sliced

1 cup cherry tomatoes, halved

1/2 cup red onion, finely chopped

1 cup shredded lettuce

1/2 cup cilantro, chopped

1 lime, cut into wedges

For Toppings:

1/2 cup Greek yogurt or sour cream

1/2 cup shredded cheese (cheddar or Mexican blend)

Hot sauce (optional)

Instructions

Marinate the Chicken:

    - In a large bowl, combine olive oil, lime juice, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Add the chicken breasts and coat thoroughly. Cover and let marinate for at least 30 minutes (or up to 2 hours in the refrigerator).

      Cook the Rice:

        - If not already cooked, prepare the brown rice according to package instructions. Fluff and set aside.

          Grill the Chicken:

            - Preheat the grill to medium-high heat. Once hot, grill the marinated chicken breasts for about 6-7 minutes per side or until fully cooked (internal temperature of 165°F). Remove from grill and let rest for 5-10 minutes before slicing.

              Prepare the Bowl Base:

                - In large serving bowls, layer the cooked brown rice (or quinoa) as the base.

                  Add the Ingredients:

                    - Top the rice with black beans, corn, avocado slices, cherry tomatoes, red onion, and shredded lettuce.

                      Slice and Serve:

                        - Slice the grilled chicken and place it on top of the prepared bowls. Sprinkle with chopped cilantro.

                          Add Toppings:

                            - Drizzle Greek yogurt or sour cream over the top, sprinkle with shredded cheese, and add a squeeze of fresh lime juice. For those who enjoy a kick, drizzle with hot sauce.

                              Garnish and Enjoy:

                                - Serve the taco bowls immediately with lime wedges on the side for extra zest!
