Grilled Fresh Summer Sandwich Melt

Ingredients
  

4 slices of sourdough bread

1 cup fresh mozzarella cheese, sliced

1 medium ripe tomato, sliced

1 ripe avocado, sliced

1/2 cup fresh basil leaves

2 tablespoons pesto sauce

2 tablespoons olive oil

Salt and pepper, to taste

Optional: Balsamic glaze for drizzling

Prep the Ingredients: Start by washing and slicing the fresh mozzarella, tomato, and avocado. Rinse the basil leaves and set all ingredients aside.

    Assemble the Sandwiches: Lay out two slices of sourdough bread. Spread 1 tablespoon of pesto sauce on each slice. Layer the mozzarella, tomato, avocado, and fresh basil leaves on top of one slice. Season with salt and pepper to taste, then place the second slice on top, pesto side down.

      Heat Up the Grill: Preheat your grill (or a grill pan) to medium heat. While it's heating, brush the outside of the sandwich with olive oil for a crispy finish.

        Grill the Sandwich: Once the grill is hot, place the sandwich on it and grill for about 3-4 minutes on one side, or until golden brown. Carefully flip the sandwich and grill the other side for another 3-4 minutes, ensuring the cheese melts inside.

          Serve: Once both sides are perfectly grilled, remove the sandwich from the grill. If desired, drizzle a little balsamic glaze on top for an extra burst of flavor. Slice the sandwich in half and serve immediately with a side of fresh salad or chips.
