Ingredients
  

2 large ripe lemons (zest and juice)

1 cup Greek yogurt (plain or vanilla)

1/2 cup honey (adjust based on sweetness preference)

1 cup granola (your choice, nutty or fruity)

1 cup assorted berries (strawberries, blueberries, raspberries)

1 teaspoon vanilla extract

Fresh mint leaves for garnish

A pinch of salt

Optional: 1/2 cup toasted coconut flakes for an extra layer

Instructions
 

Prepare the Lemons: Preheat a grill or grill pan on medium heat. Zest one lemon and set aside. Cut both lemons in half and remove any seeds.

    Grill the Lemons: Place the lemon halves cut side down on the grill. Grill for about 4-5 minutes, or until you see nice grill marks and the lemons are slightly caramelized. Remove from heat and let cool.

      Mix the Yogurt: In a medium-sized bowl, whisk together the Greek yogurt, honey, vanilla extract, salt, and the zest from the grilled lemon halves until well combined.

        Juice the Lemons: Once the grilled lemons are cooled, juice them into a separate bowl, ensuring no seeds drop into the juice. You should have about 2-3 tablespoons of grilled lemon juice.

          Incorporate the Juice: Pour the grilled lemon juice into the yogurt mixture and mix well to combine.

            Assemble the Parfaits:

              - In glasses or jars, layer the grilled lemon yogurt, followed by a layer of granola, then a layer of assorted berries.

                - Repeat the layers until the glasses are filled, finishing with a layer of yogurt topped with a sprinkle of granola and a few berries.

                  Garnish: Top each parfait with fresh mint leaves and, if desired, sprinkle with toasted coconut flakes for added crunch and flavor.
