Grilled Pineapple Chicken Bowls

2 boneless, skinless chicken breasts

1 fresh pineapple, peeled and cored

2 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon honey

1 teaspoon garlic powder

1 teaspoon ground ginger

Salt and black pepper to taste

1 red bell pepper, diced

1 red onion, diced

1 cup cooked brown rice or quinoa

Fresh cilantro for garnish

Lime wedges for serving

Instructions
 

Prepare the Marinade: In a bowl, mix together olive oil, soy sauce, honey, garlic powder, ground ginger, salt, and black pepper.

    Marinate the Chicken: Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are well-coated. Marinate for at least 30 minutes (or up to 2 hours for more flavor) in the refrigerator.

      Preheat the Grill: Preheat your grill to medium-high heat. While the grill is heating, slice the pineapple into rings (if using fresh), or just cut it into chunks if you prefer.

        Grill the Chicken: Remove the chicken from the marinade and let excess marinade drip off. Place the chicken on the grill and cook for about 6-7 minutes per side, or until fully cooked through and internal temperature reaches 165°F (75°C).

          Grill the Pineapple: During the last 5 minutes of grilling the chicken, add the pineapple rings or chunks to the grill. Grill until they get nice grill marks and caramelize, about 3-4 minutes.

            Prepare the Veggies: While the chicken and pineapple are grilling, in a skillet over medium heat, sauté the diced red bell pepper and red onion until soft, about 5-7 minutes. Season lightly with salt and pepper.

              Assemble the Bowls: In serving bowls, layer cooked brown rice or quinoa as a base. Slice the grilled chicken and place it over the rice. Add the grilled pineapple and sautéed vegetables on top.

                Garnish and Serve: Sprinkle fresh cilantro over each bowl and serve with lime wedges on the side for a zesty finish.
