Grilled Pineapple Popsicles

1 medium ripe pineapple, peeled, cored, and cut into spears

1/4 cup brown sugar

1 teaspoon ground cinnamon

1/4 cup honey or agave syrup

1/2 cup coconut milk (full-fat for creaminess)

1 teaspoon vanilla extract

Juice of 1 lime

Pinch of sea salt

Optional: toasted coconut flakes for garnish

Prepare the Pineapple: In a mixing bowl, combine brown sugar and ground cinnamon. Toss the pineapple spears in the mixture until they are evenly coated.

    Grill the Pineapple: Preheat your grill to medium-high heat. Place the coated pineapple spears on the grill. Cook for about 3-4 minutes on each side, until grill marks form and the pineapple caramelizes. Remove them from the grill and let them cool slightly.

      Blend the Base: In a blender, combine honey (or agave syrup), coconut milk, vanilla extract, lime juice, and a pinch of sea salt. Blend until smooth and creamy.

        Assemble the Popsicles: In popsicle molds, layer the grilled pineapple spears, ensuring they fit snugly. Pour the creamy coconut mixture over the pineapple until each mold is filled.

          Freeze: Insert sticks into the molds and freeze for at least 4-6 hours or until completely solid.

            Serve: To remove the popsicles, run warm water over the outside of the molds for a few seconds. Gently pull the popsicles out and, if desired, sprinkle with toasted coconut flakes for an extra tropical touch.
