Grilled Steak Salad with Corn Salsa

For the Steak:

1 lb flank steak

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

Juice of 1 lime

For the Salad:

6 cups mixed salad greens (arugula, spinach, and romaine)

1 cup cherry tomatoes, halved

1 avocado, diced

½ red onion, thinly sliced

½ cup crumbled feta cheese

Fresh cilantro, for garnish

For the Corn Salsa:

2 cups fresh corn kernels (or 1 can, drained)

1 small red bell pepper, diced

1 jalapeño, seeded and minced

Juice of 1 lime

Salt and pepper to taste

¼ cup fresh cilantro, chopped

Marinate the Steak: In a medium bowl, whisk together olive oil, minced garlic, smoked paprika, ground cumin, chili powder, lime juice, salt, and pepper. Add the flank steak, ensuring it's well-coated. Marinate for at least 30 minutes or up to 2 hours in the refrigerator.

    Prepare the Corn Salsa: In a large mixing bowl, combine the corn kernels, diced red bell pepper, minced jalapeño, lime juice, salt, pepper, and chopped cilantro. Mix well and set aside for the flavors to meld.

      Grill the Steak: Preheat your grill to medium-high heat. Remove the steak from the marinade and grill for about 6-8 minutes per side, or until it reaches your desired level of doneness (135°F for medium-rare). Once done, remove from the grill and let it rest for 5-10 minutes before slicing.

        Assemble the Salad: While the steak rests, prepare the salad. In a large bowl, combine the mixed greens, halved cherry tomatoes, diced avocado, and sliced red onion. Toss gently to mix.
