Ingredients

1 cup natural peanut butter (smooth or crunchy)

¼ cup honey or maple syrup (for a vegan option)

½ cup rolled oats

¼ cup unsweetened cocoa powder

1 teaspoon vanilla extract

¼ teaspoon salt

½ cup dark chocolate chips (dairy-free if needed)

Optional toppings: crushed nuts, shredded coconut, or sea salt

Instructions

Prepare the Pan: Line an 8x8-inch baking dish with parchment paper, leaving an overhang on the sides for easy removal later. Grease lightly with cooking spray or oil.

Mix the Base: In a large mixing bowl, combine the peanut butter, honey (or maple syrup), rolled oats, cocoa powder, vanilla extract, and salt. Use a spatula or wooden spoon to mix until the ingredients are well combined and form a thick batter.

Press into the Pan: Transfer the mixture into the prepared baking dish. Spread it evenly across the bottom and press down firmly to create a compact layer. You can use a flat piece of parchment paper to help press it evenly.

Melt the Chocolate: In a microwave-safe bowl, melt the dark chocolate chips in increments of 30 seconds, stirring in between until smooth. Alternatively, you can use a double boiler to melt the chocolate.

Add the Chocolate Layer: Once the chocolate is melted, pour it over the pressed peanut butter oat mixture. Spread it evenly using a spatula.

Add Toppings: If desired, sprinkle crushed nuts, shredded coconut, or a pinch of sea salt over the melted chocolate for added texture and flavor.

Chill: Place the baking dish in the refrigerator for at least 2 hours, or until the chocolate is set and the bars are firm.

Slice and Serve: Once set, lift the bars out of the pan using the parchment overhang. Place on a cutting board and slice into desired sizes. Enjoy your guilt-free treats!
