Ingredients

12 oz spiral pasta (e.g., fusilli or cavatappi)

1 cup Hatch green chilies, diced (fresh or canned)

1 cup cooked chicken, shredded (optional)

2 cups shredded Mexican cheese blend (cheddar, Monterey Jack, etc.)

1 cup ricotta cheese

1 cup marinara sauce

1/2 cup sour cream

1 medium onion, finely diced

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/2 teaspoon salt

1/4 teaspoon cayenne pepper (optional, for extra heat)

1/4 cup fresh cilantro, chopped (for garnish)

Olive oil (for sautéing)

1/2 cup breadcrumbs (optional, for crispy topping)

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spiral pasta and cook according to package instructions until al dente. Drain and set aside.

Sauté Vegetables: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

Mix the Sauce: In a large bowl, combine the diced Hatch green chilies, shredded chicken (if using), cooked pasta, ricotta cheese, marinara sauce, sour cream, ground cumin, smoked paprika, black pepper, salt, and cayenne pepper. Mix until well combined.

Assemble the Dish: Preheat your oven to 375°F (190°C). In a greased 9x13 inch baking dish, spread half of the pasta mixture in an even layer. Sprinkle half of the shredded cheese on top. Add the remaining pasta mixture and top with the rest of the cheese. If desired, sprinkle breadcrumbs over the cheese for a crispy topping.

Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

Garnish and Serve: Once out of the oven, let the dish rest for 5 minutes. Garnish with freshly chopped cilantro before serving. Enjoy your flavorful and creamy Hatch Chili Baked Pasta Spirals!
