Ingredients
  

2 large boneless, skinless chicken breasts

1 cup roasted Hatch green chilies, diced (fresh or canned)

1 cup pepper jack cheese, shredded

1 cup sharp cheddar cheese, shredded

1/2 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon lime juice

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

4 slices of sourdough or ciabatta bread

2 tablespoons olive oil

Fresh cilantro leaves, for garnish (optional)

Instructions
 

Prep the Chicken:

    - Preheat your grill to medium-high heat.

      - While the grill is heating up, season the chicken breasts with garlic powder, smoked paprika, salt, and pepper. Drizzle with olive oil, ensuring they're well coated.

        Grill the Chicken:

          - Place the chicken breasts on the grill and cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from the grill and allow to rest for 5 minutes.

            Prepare the Sauce:

              - In a bowl, mix together mayonnaise, Dijon mustard, lime juice, and additional salt and pepper. Adjust seasoning to taste.

                Combine Ingredients:

                  - Dice the grilled chicken into bite-sized pieces. In a mixing bowl, combine the diced chicken with the roasted Hatch chilies and a generous amount of both pepper jack and cheddar cheese (reserve some cheese for later).

                    Assemble the Melts:
