Ingredients

1 cup rolled oats

½ cup nut butter (almond butter or peanut butter)

½ cup honey or maple syrup

1 cup mixed nuts (almonds, walnuts, pecans), roughly chopped

½ cup semi-sweet or dark chocolate chips

½ cup dried fruit (raisins, cranberries, or apricots), chopped

¼ cup chia seeds or flax seeds

1 teaspoon vanilla extract

½ teaspoon cinnamon

A pinch of sea salt

Instructions

Prepare Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped nuts, dried fruit, chia seeds, cinnamon, and a pinch of salt. Mix well to ensure even distribution.

Mix Wet Ingredients: In a separate bowl, combine the nut butter, honey (or maple syrup), and vanilla extract. Mix until smooth and well combined.

Combine Mixtures: Pour the wet mixture over the dry ingredients and stir until everything is thoroughly coated. You should have a sticky mixture that holds together.

Add Chocolate Chips: Fold in the chocolate chips gently, ensuring they are evenly distributed throughout the mixture.

Shape the Bites: Using your hands, take about a tablespoon of the mixture and roll it into a ball. Place the energy bites on a baking sheet lined with parchment paper. Repeat until all the mixture is used.

Chill: Place the baking sheet in the refrigerator for at least 30 minutes to set the bites. This will help them firm up and hold their shape better.

Store: Once set, transfer the energy bites to an airtight container. They can be stored in the refrigerator for up to a week or in the freezer for longer shelf life.

Prep Time: 15 minutes | Total Time: 45 minutes | Servings: About 20 bites
