Hearty Crockpot Vegetable Stew with Garlic Bread

3 cups vegetable broth

2 medium potatoes, diced

2 carrots, sliced

1 cup green beans, trimmed and cut

1 cup bell peppers, chopped (red and yellow for color)

1 cup mushrooms, sliced

1 can (15 oz) diced tomatoes (with juices)

1 medium onion, diced

4 garlic cloves, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon olive oil (for sautéing)

1 cup frozen peas (added later)

For the Garlic Bread:

1 loaf of French bread

1/2 cup unsalted butter, softened

4 garlic cloves, minced

2 tablespoons fresh parsley, finely chopped

Pinch of salt

Sauté the Aromatics: In a skillet over medium heat, add olive oil. Once heated, toss in the diced onion and sauté until translucent, about 4-5 minutes. Add the minced garlic and sauté for an additional minute until fragrant.

    Prepare the Stew: Transfer the sautéed onion and garlic to your crockpot. Add in the diced potatoes, sliced carrots, green beans, bell peppers, mushrooms, diced tomatoes (with juices), vegetable broth, dried thyme, dried oregano, smoked paprika, salt, and pepper. Stir everything together to combine well.

      Cook: Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours. About 30 minutes before serving, stir in the frozen peas.
