Hearty Lentil Soup with Fresh Herbs

1 cup dried green or brown lentils, rinsed and drained

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 medium potato, peeled and chopped

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

6 cups vegetable broth

1 can (14 oz) diced tomatoes, with juices

1 bay leaf

1/4 cup fresh parsley, chopped

1/4 cup fresh cilantro, chopped (optional)

Salt and pepper to taste

Juice of 1 lemon (for finishing)

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

    Add the Vegetables: Add the diced carrots, celery, and potato to the pot. Cook for another 5 minutes, stirring occasionally, until they start to soften.

      Spice it Up: Sprinkle in the ground cumin and smoked paprika. Stir to coat the vegetables and allow the spices to toast for about 1 minute, enhancing their flavors.

        Combine Ingredients: Pour in the rinsed lentils, vegetable broth, diced tomatoes (with juice), and bay leaf. Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for 30-35 minutes, or until the lentils and vegetables are tender.

          Herb Infusion: Once the soup has reached your desired consistency, remove the bay leaf. Stir in the fresh parsley and cilantro (if using). Season the soup with salt and pepper to taste.
