Hearty Vegetable Stew with Rustic Bread

2 tablespoons olive oil

1 large onion, diced

3 cloves garlic, minced

2 carrots, sliced

2 stalks celery, chopped

1 bell pepper, diced (any color)

1 zucchini, diced

1 cup mushrooms, sliced

2 medium potatoes, cubed

1 cup green beans, trimmed and cut into 1-inch pieces

1 can (14.5 oz) diced tomatoes (with juices)

4 cups vegetable broth

1 cup frozen peas

2 teaspoons dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

For the Rustic Bread:

3 cups all-purpose flour

1 teaspoon salt

1 packet (2 1/4 teaspoons) active dry yeast

1 teaspoon sugar

1 1/4 cups warm water (about 110°F)

1 tablespoon olive oil

Instructions
 

Prepare the Dough for Rustic Bread:

    - In a small bowl, dissolve the sugar in warm water. Sprinkle the yeast over the water and let it sit for about 5-10 minutes until foamy.

      - In a large bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil. Stir until the mixture forms a rough dough.

        - Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

          Make the Hearty Vegetable Stew:

            - In a large pot, heat the olive oil over medium heat. Add diced onion and garlic; sauté until translucent, about 5 minutes.

              - Add the sliced carrots, chopped celery, and bell pepper. Cook for another 5-7 minutes until slightly tender.

                - Stir in the zucchini, mushrooms, potatoes, and green beans. Cook for an additional 5 minutes.

                  - Pour in the diced tomatoes with their juices and the vegetable broth. Add thyme, rosemary, salt, and pepper.                         - Place the loaf on a baking sheet lined with parchment paper. Cut a few slashes on top of the dough to allow it to expand during baking.

                          - Bake for 30-35 minutes or until the bread is golden brown and sounds hollow when tapped on the bottom. Let it cool on a wire rack.

                            Serve:
