For the crust and topping:

2 cups all-purpose flour

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1 cup unsalted butter, cold and cubed

1/2 teaspoon salt

1 teaspoon cinnamon

1/2 teaspoon nutmeg

3/4 cup oats (quick or old-fashioned)

For the apple filling:

4-5 medium Honey Crisp apples, peeled and thinly sliced

1/4 cup lemon juice

2 tablespoons cornstarch

1/2 cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon cinnamon

1/4 teaspoon nutmeg

For serving (optional):

Whipped cream or ice cream

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 9x13-inch baking dish with parchment paper, leaving some overhang for easy removal.

    Make the Crust and Topping: In a large mixing bowl, combine the flour, granulated sugar, brown sugar, salt, cinnamon, and nutmeg. Add the cold, cubed butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs. Stir in the oats until evenly distributed.

      Reserve Topping: Take about half of this mixture, press it firmly into the bottom of your prepared baking dish to form an even crust. Reserve the remaining mixture for topping.

        Prepare the Apple Filling: In another mixing bowl, toss the sliced Honey Crisp apples with lemon juice, cornstarch, granulated sugar, vanilla extract, cinnamon, and nutmeg. Ensure the apples are well-coated.

          Assemble the Bars: Spread the apple filling evenly over the crust. Then, crumble the reserved topping mixture over the apple layer, making sure to cover most of the apples.

            Bake: Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the apples are bubbling.

              Cool and Serve: Once baked, remove the bars from the oven and allow them to cool in the pan for at least 10-15 minutes. Once cooled, use the parchment paper to lift the bars out of the pan, cut into squares, and serve with whipped cream or a drizzle of caramel sauce if desired.
