Ingredients

1 lb large shrimp, peeled and deveined

2 tablespoons honey

3 tablespoons soy sauce (low sodium)

2 tablespoons rice vinegar

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon cornstarch

2 tablespoons sesame oil (or vegetable oil)

1 bell pepper (red or yellow), sliced thin

1 cup snap peas

1 cup broccoli florets

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Cooked rice or noodles (for serving)

Instructions

Prepare the Sauce: In a small bowl, mix honey, soy sauce, rice vinegar, garlic, and ginger. Set aside.

Dredge the Shrimp: In another bowl, toss the shrimp with cornstarch until evenly coated. This helps to create a nice texture when cooked.

Heat the Oil: In a large skillet or wok, heat sesame oil over medium-high heat until shimmering.

Cook the Shrimp: Add the shrimp to the skillet in a single layer. Cook for about 2-3 minutes until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

Stir Fry the Vegetables: In the same skillet, add the bell pepper, snap peas, and broccoli. Stir-fry for about 4-5 minutes, or until the vegetables are tender-crisp.

Combine and Finish Cooking: Return the shrimp to the skillet with the vegetables. Pour the honey garlic sauce over the mixture. Stir to coat everything evenly, cooking for an additional 2 minutes until the sauce thickens slightly.

Serve: Remove from heat and garnish with chopped green onions and sesame seeds. Serve over cooked rice or noodles.
