3 tablespoons honey

2 tablespoons olive oil

1 teaspoon fresh rosemary, finely chopped (or ½ teaspoon dried rosemary)

1 tablespoon unsalted butter (optional, for extra richness)

Fresh rosemary sprigs for garnish (optional)

Prep the Carrots: If using regular carrots, peel and cut them into even-sized sticks (about 1/4 inch thick). If using baby carrots, rinse them under cold water.

    Make the Glaze: In a small saucepan, combine the honey, olive oil, and chopped rosemary. Heat over low-medium heat until the mixture is warm and the honey is slightly runny, about 1-2 minutes. Be careful not to boil.

      Sauté the Carrots: In a large skillet over medium heat, add the baby carrots and season with salt and pepper. If you're using butter, add it now. Sauté the carrots for about 5-7 minutes, stirring occasionally, until they begin to soften.

        Add the Glaze: Pour the honey-rosemary mixture over the sautéed carrots. Toss to coat evenly and continue cooking for another 5-10 minutes, allowing the glaze to reduce and caramelize slightly. Stir occasionally to prevent sticking.

          Check for Doneness: The carrots should be tender but not mushy. You can test by piercing them with a fork; they should be soft on the outside yet still firm inside.

            Serve: Once cooked, remove the skillet from heat. Transfer the glazed carrots to a serving dish, garnish with fresh rosemary sprigs if desired, and serve warm.
