8 oz rotini pasta

2 cups cooked chicken breast, diced

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red bell pepper, diced

1/4 cup red onion, finely chopped

1/2 cup shredded carrots

1/2 cup corn kernels (fresh or canned)

1/4 cup feta cheese, crumbled (optional)

1/4 cup fresh parsley, chopped (for garnish)

For the Honey Mustard Dressing:

1/4 cup honey

1/4 cup Dijon mustard

1/4 cup olive oil

2 tbsp apple cider vinegar

Salt and pepper to taste

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Dressing: In a medium bowl, whisk together honey, Dijon mustard, olive oil, apple cider vinegar, salt, and pepper until smooth and well combined. Adjust seasoning to taste.

      Combine Ingredients: In a large mixing bowl, add the cooked pasta, diced chicken, cherry tomatoes, cucumber, red bell pepper, red onion, shredded carrots, and corn. Toss gently to combine.
