1.5 lbs pork tenderloin

1/4 cup honey

1/4 cup Dijon mustard

2 tablespoons apple cider vinegar

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh thyme sprigs for garnish (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Marinade: In a medium bowl, whisk together honey, Dijon mustard, apple cider vinegar, olive oil, minced garlic, dried thyme, smoked paprika, salt, and pepper until well combined.

      Marinate the Pork: Place the pork tenderloin in a large resealable plastic bag or shallow dish. Pour half of the marinade over the tenderloin, making sure it's well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour to allow flavors to meld (or overnight for maximum flavor).

        Sear the Pork: In a large oven-safe skillet, heat a splash of olive oil over medium-high heat. Remove the pork from the marinade, shaking off excess, and sear the pork on all sides until golden brown (about 3-4 minutes per side).

          Glaze the Pork: After searing, pour the remaining marinade over the pork, ensuring it is evenly coated.

            Roast in the Oven: Transfer the skillet to the preheated oven and roast the pork for 20-25 minutes, or until it reaches an internal temperature of 145°F (63°C). Brush it with the glaze halfway through the cooking time for extra flavor.

              Rest the Pork: Once cooked, remove the pork from the oven, transfer it to a cutting board, and let it rest for 5-10 minutes. This helps retain the juices and ensures a tender cut of meat.
