4 large whole wheat tortillas

1 cup hummus (store-bought or homemade)

1 medium cucumber, thinly sliced

1 medium carrot, julienned

1 red bell pepper, thinly sliced

1 cup baby spinach leaves

½ cup alfalfa sprouts (optional)

½ teaspoon smoked paprika

¼ teaspoon garlic powder

Salt and pepper to taste

2 tablespoons olive oil (for optional drizzling)

Instructions
 

Prepare Your Workspace: Lay out a large cutting board or a clean surface to roll the pinwheels.

    Spread the Hummus: Take one tortilla and spread ¼ cup of hummus evenly across the entire surface, leaving a small border around the edges.

      Layer the Veggies: Start by placing a handful of baby spinach in the middle of the tortilla. Top it with a few slices of cucumber, some julienned carrots, and red bell pepper. If using, scatter alfalfa sprouts on top.

        Season the Filling: Sprinkle the smoked paprika, garlic powder, salt, and pepper over the veggie layers for added flavor.

          Roll it Up: Starting from the edge closest to you, carefully roll the tortilla away from you, tucking in the filling as you go to ensure a tight roll. Continue rolling until you reach the edge of the tortilla, then gently press to seal.

            Cut the Pinwheels: Using a sharp knife, slice the rolled tortilla into 1-inch thick pinwheels. Arrange them cut-side up on a serving platter.

              Optional Drizzle: For an extra touch of flavor, drizzle with a bit of olive oil before serving.
