Kid-Friendly Spinach and Cheese Stuffed Shells

20 jumbo pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup Parmesan cheese, grated

1 large egg

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 cups marinara sauce

Fresh basil leaves, for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside to cool slightly.

    Prepare the Filling: In a large mixing bowl, combine the chopped spinach, ricotta cheese, half of the mozzarella cheese, Parmesan cheese, egg, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.

      Stuff the Shells: Using a spoon or a piping bag, carefully fill each cooked pasta shell with the spinach and cheese mixture.

        Preheat the Oven: Preheat your oven to 375°F (190°C).

          Layer the Marinara: Spread a thin layer of marinara sauce across the bottom of a 9x13 inch baking dish. This prevents the shells from sticking.

            Arrange the Shells: Place the stuffed shells in a single layer on top of the marinara sauce. Pour the remaining marinara sauce over the shells, ensuring they are well coated.

              Add Cheese Topping: Sprinkle the remaining mozzarella cheese evenly over the top of the shells.

                Bake: Cover the baking dish with aluminum foil (to prevent browning too quickly) and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.

                  Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves, if desired. Serve warm and enjoy!
