1 lb (450g) flank steak

2 cups mixed greens (arugula, spinach, and kale)

1 cup cherry tomatoes, halved

1 cucumber, diced

1 avocado, sliced

1/4 cup red onion, thinly sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1 lemon, juiced and zested

2 tablespoons olive oil

1 tablespoon honey

1 tablespoon Dijon mustard

Salt and pepper to taste

Optional: 1/4 teaspoon red pepper flakes for heat

Marinate the Steak: In a mixing bowl, combine the lemon juice, lemon zest, olive oil, honey, Dijon mustard, salt, and pepper. Add the flank steak to the marinade and let it sit for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).

    Cook the Steak: Heat a grill or a skillet over medium-high heat. Remove the steak from the marinade and season with additional salt and pepper. Cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let it rest for 5 minutes before slicing it thinly against the grain.
