Lemon Butter Garlic Chicken Rice

4 boneless, skinless chicken thighs

1 cup jasmine rice

2 cups low-sodium chicken broth

4 tablespoons unsalted butter

4 cloves garlic, minced

Zest and juice of 2 lemons

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

Chopped fresh parsley for garnish

Lemon slices for garnish

Marinate the Chicken: In a bowl, combine chicken thighs with lemon juice, lemon zest, thyme, paprika, salt, and pepper. Let it marinate for at least 30 minutes to enhance the flavors.

    Cook the Rice: In a medium saucepan, bring chicken broth to a boil. Add the jasmine rice, reduce the heat to low, and cover. Cook for about 15 minutes, or until the rice is tender and the liquid is absorbed. Remove from heat and let it sit, covered, for another 5 minutes.

      Sear the Chicken: In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the marinated chicken thighs and cook for about 6-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F). Once done, remove the chicken from the skillet and set aside.

        Make the Sauce: In the same skillet, lower the heat to medium, and add the remaining 2 tablespoons of butter. Add minced garlic and sauté for about 1 minute, until fragrant. Pour in the remaining lemon juice and let it simmer for 2 minutes, scraping up any bits from the bottom of the pan.

          Combine: Reduce heat to low, return the chicken to the skillet, and spoon the sauce over the chicken to coat it well. Allow it to warm up for another 2 minutes.

            Serve: Fluff the rice with a fork and divide it among plates. Place the chicken on top of the rice and generously drizzle the lemon garlic butter sauce over everything. Garnish with chopped parsley and lemon slices.
