4 boneless, skinless chicken breasts

4 tablespoons olive oil

3 cloves garlic, minced

1 large lemon (zested and juiced)

1 teaspoon dried rosemary

1 teaspoon dried thyme

Salt and pepper to taste

2 cups cherry tomatoes, halved

1 bell pepper (any color), sliced

1 medium red onion, sliced

Fresh parsley for garnish (optional)

4 sheets of aluminum foil (about 12x18 inches)

Preheat the Oven or Grill: Preheat your oven to 400°F (200°C) or prepare your grill over medium heat.

    Prepare the Marinade: In a small bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, dried rosemary, dried thyme, salt, and pepper. Mix well to create a marinade.

      Prepare the Foil Packets: Lay out the aluminum foil sheets on a flat surface. Place one chicken breast in the center of each sheet. Drizzle a quarter of the marinade over each chicken breast.

        Add the Vegetables: Divide the cherry tomatoes, bell pepper, and red onion evenly among the foil packets, placing them around the chicken.

          Seal the Packets: Carefully fold the sides of the foil over the chicken and vegetables, then fold the ends to create a sealed packet. Ensure there are no holes for steam to escape.

            Cook the Packets: Place the foil packets on a baking sheet if using the oven or directly on the grill. Cook for 25-30 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (75°C).
