Lemon Herb Chicken with Asparagus

4 boneless, skinless chicken breasts

1 bunch of fresh asparagus, trimmed

3 tablespoons olive oil

2 lemons (zested and juiced)

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 teaspoon paprika

Salt and black pepper, to taste

Lemon slices, for garnish

Fresh parsley, chopped, for garnish

Instructions
 

Marinate the Chicken: In a medium bowl, whisk together the olive oil, lemon zest, lemon juice, minced garlic, rosemary, thyme, paprika, salt, and pepper. Add the chicken breasts to the bowl, ensuring they are evenly coated in the marinade. Cover and let marinate in the refrigerator for at least 30 minutes (or up to 2 hours for a more intense flavor).

    Prepare the Asparagus: While the chicken is marinating, prepare the asparagus. Toss the trimmed asparagus in a small bowl with a drizzle of olive oil, a pinch of salt, and black pepper.

      Preheat the Grill or Oven: If grilling, preheat the grill to medium-high heat. For oven baking, preheat your oven to 400°F (200°C).

        Cook the Chicken: Remove the chicken from the marinade and grill it for about 6-7 minutes per side, or until fully cooked and golden brown. If baking, place the chicken breasts on a greased baking sheet and bake for 25-30 minutes, or until cooked through and juices run clear.

          Cook the Asparagus: During the last 5-7 minutes of cooking, add the asparagus to the grill or put them on another baking sheet in the oven. Grill or roast until they are tender and slightly charred, about 5-7 minutes.
