1 large ripe mango, peeled and diced

1 can (15 oz) black beans, rinsed and drained

1 red bell pepper, diced

1 small red onion, finely chopped

1 cup corn kernels (fresh, frozen, or canned)

1/4 cup fresh cilantro, chopped

2 avocados, diced

Juice of 2 limes

2 tablespoons olive oil

1 teaspoon cumin

Salt and pepper to taste

Optional: 1 jalapeño, finely chopped (for heat)

In a large mixing bowl, combine the diced mango, black beans, red bell pepper, red onion, corn, and cilantro.

    If using, add the finely chopped jalapeño for a spicy kick.

      In a small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper until well combined.
