Mango Glazed Shrimp

Ingredients
  

1 pound large shrimp, peeled and deveined

1 ripe mango, peeled and diced

1/4 cup honey

2 tablespoons soy sauce

2 tablespoons fresh lime juice

1 tablespoon rice vinegar

2 cloves garlic, minced

1 teaspoon fresh ginger, minced

1 teaspoon sesame oil

Salt and pepper to taste

Fresh cilantro, for garnish

Lime wedges, for serving

Cooked jasmine rice or quinoa, for serving (optional)

Instructions
 

Make the Mango Glaze:

    - In a blender, combine the diced mango, honey, soy sauce, lime juice, rice vinegar, minced garlic, minced ginger, and sesame oil. Blend until smooth. Taste the glaze and season with salt and pepper as needed. Adjust sweetness with additional honey if desired.

      Marinate the Shrimp:

        - Place the peeled and deveined shrimp in a bowl and pour half of the mango glaze over the shrimp. Toss well to coat. Let the shrimp marinate for about 15-20 minutes at room temperature.

          Cook the Shrimp:

            - Heat a large skillet or wok over medium-high heat. Add a splash of oil to the pan. Once hot, add the marinated shrimp to the skillet, making sure to leave excess glaze in the bowl for later. Sauté the shrimp for about 2-3 minutes on one side until they start to turn pink.

              Add the Glaze:

                - Flip the shrimp and pour the reserved mango glaze over them. Continue cooking for another 2-3 minutes, stirring occasionally, until the shrimp are fully cooked (they should be opaque and firm to the touch).

                  Serve:

                    - Remove from heat and transfer the shrimp to plates. Garnish with freshly chopped cilantro and serve with lime wedges on the side. You can also serve them over a bed of cooked jasmine rice or quinoa for a complete meal. Drizzle with extra mango glaze if desired.
