Mango Glazed Tofu

1 block (14 oz) firm tofu, drained and pressed

1 ripe mango, peeled and diced

1/4 cup soy sauce

2 tablespoons maple syrup

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon fresh ginger, grated

2 cloves garlic, minced

1 tablespoon cornstarch

1 tablespoon water

2 tablespoons vegetable oil (for frying)

Green onions and sesame seeds for garnish

Instructions
 

Prepare the Tofu: Cut the pressed tofu into bite-sized cubes. Pat the cubes dry with a paper towel to remove excess moisture.

    Make the Mango Glaze: In a blender, combine the diced mango, soy sauce, maple syrup, sesame oil, rice vinegar, grated ginger, and minced garlic. Blend until smooth and set aside.

      Cook the Tofu: Heat the vegetable oil in a non-stick skillet over medium heat. Once hot, add the tofu cubes in a single layer. Fry for about 3-4 minutes on each side or until golden brown and crispy. Remove the tofu from the skillet and set on a paper towel to drain excess oil.

        Thicken the Sauce: In a small bowl, mix the cornstarch with water until dissolved. Pour the mango glaze into the same skillet over medium heat. Once it starts to simmer, add the cornstarch slurry and stir continuously until the sauce thickens (about 2-3 minutes).

          Combine Tofu and Sauce: Return the golden tofu to the skillet with the mango glaze. Gently toss to coat each cube evenly in the sauce. Cook for an additional 1-2 minutes to heat through.

            Serve: Plate the glazed tofu and sprinkle with chopped green onions and sesame seeds for garnish.
