Ingredients

4 medium carrots, peeled and cut into 1-inch pieces

3 medium turnips, peeled and cut into 1-inch cubes

2 tablespoons olive oil

3 tablespoons pure maple syrup

2 tablespoons Dijon mustard

1 teaspoon garlic powder

1 teaspoon thyme (fresh or dried)

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions

Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare Vegetables: In a large bowl, combine the carrot pieces and turnip cubes. Drizzle with olive oil and toss to coat the vegetables evenly.

Mix Dressing: In a separate small bowl, whisk together the maple syrup, Dijon mustard, garlic powder, thyme, salt, and pepper until well combined.

Combine: Pour the maple Dijon mixture over the carrots and turnips. Toss everything together until the vegetables are thoroughly coated with the glaze.

Roast: Spread the coated carrots and turnips in a single layer on the prepared baking sheet. Make sure they are not overcrowded for even roasting.

Bake: Roast in the preheated oven for about 25-30 minutes, or until the vegetables are tender and caramelized. Stir halfway through for even cooking.

Serve: Remove from the oven and let cool slightly. Transfer to a serving dish, garnish with fresh parsley if desired, and serve warm.
