Ingredients

3 ripe bananas, mashed

1/2 cup maple syrup (preferably pure)

1/3 cup unsalted butter, melted

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cups all-purpose flour

1/2 cup chopped walnuts

1/2 teaspoon ground cinnamon (optional)

1/4 cup maple sugar (for topping, optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy release.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, melted butter, and maple syrup. Stir until well blended. Then, add the eggs and vanilla extract. Mix until smooth and combined.

Combine Dry Ingredients: In another bowl, whisk together the baking soda, salt, and ground cinnamon (if using). Then, gradually mix in the all-purpose flour until just combined. Be careful not to overmix; it's okay if a few lumps remain.

Fold in Walnuts: Gently fold in the chopped walnuts. Reserve a small handful for topping if desired.

Pour into Loaf Pan: Pour the banana bread batter into the prepared loaf pan and sprinkle the reserved walnuts and/or maple sugar on top for a crunchy finish.

Bake: Place the loaf pan in the preheated oven and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, tent it with aluminum foil halfway through baking.

Cool and Serve: Once baked, remove the loaf pan from the oven and allow the bread to cool in the pan for about 10 minutes. Then, transfer the bread to a wire rack to cool completely before slicing.

Enjoy: Slice and serve warm or at room temperature. It pairs beautifully with a dollop of butter or spreadable cream cheese drizzled with additional maple syrup!
