Ingredients

2 medium zucchinis

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and pepper to taste

1 package of wonton wrappers

Olive oil spray

Fresh basil leaves (for garnish)

Marinara sauce (for serving)

Instructions

Prep Zucchini: Using a spiralizer or a vegetable peeler, thinly slice the zucchinis into long, thin strips. You want them flexible enough to serve as the ravioli's pasta.

Prepare Filling: In a mixing bowl, combine the ricotta cheese, grated Parmesan, garlic powder, dried oregano, salt, and pepper. Mix well until creamy and evenly seasoned.

Assemble Ravioli: On a clean surface, lay out the wonton wrappers. Place a teaspoon of the ricotta mixture in the center of each wrapper. Layer a slice of zucchini over the filling, then fold the wrapper over to create a pocket. Press the edges firmly to seal them, ensuring no filling escapes during cooking.

Preheat Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

Air Fry Ravioli: Lightly spray the air fryer basket with olive oil. Place the ravioli in a single layer, making sure they don’t touch each other. Brush the tops of the ravioli lightly with olive oil spray to help them crisp up. Air fry for about 8-10 minutes or until they are golden and crispy.

Serve: Once cooked, remove the ravioli from the air fryer and let them cool slightly. Serve the mini zucchini ravioli drizzled with marinara sauce and garnish with fresh basil leaves.
