2 cans young green jackfruit in water or brine, drained and rinsed

1 tablespoon olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup BBQ sauce (your favorite variety)

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper, to taste

12 small slider buns

1 cup nacho cheese sauce (dairy or vegan)

1 cup pickled jalapeños, sliced

1 cup diced tomatoes

1 cup shredded lettuce

Fresh cilantro, for garnish

Prepare the Jackfruit: Begin by shredding the jackfruit using your hands or a fork until it resembles pulled pork. Set aside.

    Cook the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 4-5 minutes until they are translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

      Simmer the Jackfruit: Add the shredded jackfruit to the skillet along with the BBQ sauce, smoked paprika, and cumin. Stir to coat the jackfruit evenly. Cook on medium heat for about 20 minutes, stirring occasionally, until the jackfruit is tender and has absorbed the flavors. Season with salt and pepper to taste.

        Prepare the Sliders: While the jackfruit is cooking, slice the slider buns in half and lightly toast them in the oven or on a griddle until golden brown.
