2 cups broccoli florets, steamed and chopped

1 cup sharp cheddar cheese, shredded

2 medium russet potatoes, peeled and cubed

1/2 cup cream cheese, softened

1/4 cup green onions, chopped

1 teaspoon garlic powder

Salt and pepper to taste

1 cup breadcrumbs (Panko preferred for crunch)

1/2 teaspoon paprika (optional for extra flavor)

Olive oil or cooking spray for greasing

Instructions
 

Prepare the Potatoes:

    - In a large pot, boil the cubed russet potatoes until tender, about 15-20 minutes. Drain and let cool slightly.

      Mash and Mix:

        - Place the boiled potatoes in a mixing bowl. Mash them until smooth. Add the softened cream cheese, steamed broccoli, shredded cheddar cheese, green onions, garlic powder, salt, and pepper. Mix until fully combined.

          Form the Poppers:

            - Preheat your oven to 400°F (200°C). Grease a baking sheet with olive oil or cooking spray.

              - Using your hands, scoop a tablespoon of the potato mixture and form small balls or patties (about 1.5 inches in diameter). Roll each popper in breadcrumbs until fully coated.

                Baking:

                  - Place the prepared potato poppers on the greased baking sheet, ensuring they are evenly spaced. For an added kick, sprinkle some paprika on top of each popper.

                    - Bake in the preheated oven for 20-25 minutes or until golden brown and crispy. Carefully flip the poppers halfway through baking for even crispiness.
