Ingredients

1 can (16.3 oz) refrigerated biscuit dough

1 lb ground beef or turkey

1 cup breadcrumbs (Italian-seasoned or plain)

1/2 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

1 large egg

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon pepper

1 cup marinara sauce (store-bought or homemade)

1 cup shredded mozzarella cheese

Olive oil for brushing

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Biscuit Boats: Open the can of refrigerated biscuit dough and separate the biscuits. Flatten each biscuit with your hands or a rolling pin until about 1/4 inch thick. Use a muffin tin to help shape them into boat forms. Gently press the biscuits into the muffin cups, allowing the edges to overhang.

Make the Meatballs: In a large bowl, combine the ground meat, breadcrumbs, Parmesan cheese, chopped parsley, egg, garlic powder, onion powder, salt, and pepper. Mix until just combined, being careful not to overwork the meat.

Form Mini Meatballs: Using a tablespoon, scoop out portions of the meat mixture and roll them into small meatballs (about 1 inch in diameter). You should end up with approximately 16 to 20 meatballs.

Assemble the Boats: Place 2-3 meatballs in each biscuit boat. Spoon marinara sauce over the meatballs until they’re lightly covered (reserve some sauce for later use). Sprinkle shredded mozzarella cheese on top of each boat.

Bake: Brush the exposed edges of the biscuit boats with a little olive oil for a golden finish. Bake in the preheated oven for 15-20 minutes or until the biscuits are puffed up and golden brown, and the cheese is bubbly.

Finish and Serve: Once out of the oven, garnish with torn fresh basil leaves if desired and serve with extra marinara sauce on the side for dipping.

Enjoy: Dig into your delicious Mini Meatball Sub Biscuit Boats while they’re warm!
