2 cups frozen tater tots

1 cup broccoli florets, chopped

1 cup red bell pepper, diced

1/2 cup carrots, finely grated

1/2 cup corn (fresh or frozen)

1 cup shredded cheddar cheese (or vegan cheese for a dairy-free option)

1/4 cup green onions, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Cooking spray or olive oil for greasing

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Muffin Tin: Grease a standard muffin tin with cooking spray or olive oil to prevent sticking.

      Arrange Tater Tots: Take the frozen tater tots and place about 3-4 in each muffin cup. Use your fingers or the back of a spoon to press them down and form a cup shape. Make sure they are tightly packed.

        Bake Tater Tots: Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the tater tots are golden brown and crispy.

          Prepare the Veggie Filling: While the tater tots are baking, in a mixing bowl, combine chopped broccoli, diced red bell pepper, grated carrots, corn, shredded cheese, green onions, garlic powder, onion powder, salt, and pepper. Mix well.

            Fill the Cups: Once the tater tots are done, carefully remove the muffin tin from the oven. Spoon the veggie filling into each tater tot cup, packing it in gently.

              Final Bake: Return the muffin tin to the oven and bake for an additional 10 minutes, or until the cheese has melted and the veggies are cooked through.

                Cool and Serve: Remove the mini veggie tater tot cups from the oven and let them cool for a few minutes before gently removing from the muffin tin. Serve warm as an appetizer, snack, or a fun side dish!
