Neapolitan Chicken Skillet

4 boneless, skinless chicken breasts

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 can (14 oz) diced tomatoes, with juices

1 cup low-sodium chicken broth

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional)

Salt and pepper, to taste

1 cup fresh mozzarella cheese, cubed

Fresh basil leaves for garnish

Cooked spaghetti or crusty bread, for serving

Instructions
 

Heat the Pan: In a large skillet, heat olive oil over medium heat.

    Sear the Chicken: Season the chicken breasts with salt and pepper. Add them to the skillet and sear for about 5-6 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the diced onion and sauté for 2-3 minutes until translucent. Add the minced garlic, red bell pepper, and yellow bell pepper. Cook for another 5 minutes, stirring occasionally, until the peppers are tender.

        Add Tomatoes and Broth: Pour in the diced tomatoes with their juices and the chicken broth. Stir well to combine.

          Season: Add the dried oregano, dried basil, and red pepper flakes (if using). Bring the mixture to a simmer.

            Return the Chicken: Place the seared chicken breasts back into the skillet, ensuring they are submerged in the sauce. Cover the skillet and let it simmer for another 15-20 minutes, or until the chicken is cooked through (internal temperature of 165°F) and the sauce has thickened slightly.

              Add Mozzarella: Remove the lid, and scatter the cubed fresh mozzarella over the chicken. Cover again for 2-3 minutes until the cheese melts.

                Serve: Garnish with fresh basil leaves. Serve hot over cooked spaghetti or with crusty bread to soak up the delicious sauce.
