2 cups fresh or canned cherries, pitted and halved (if using canned, drain and reserve juice)

1 cup graham cracker crumbs

1/2 cup granulated sugar

1/4 cup unsalted butter, melted

1 cup cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

2 cups heavy whipping cream

Fresh mint leaves (for garnish)

Prepare the Cherry Filling: If you’re using fresh cherries, pit and halve them. If using canned cherries, ensure they are well-drained. In a bowl, combine the cherries with 1-2 tablespoons of sugar to enhance their sweetness. Set aside.

    Make the Graham Cracker Crust: In a medium bowl, mix the graham cracker crumbs with granulated sugar and melted butter until well combined. The mixture should resemble damp sand.

      Cream Cheese Layer: In a separate large mixing bowl, beat the softened cream cheese using an electric mixer until smooth. Gradually add in the powdered sugar and vanilla extract, mixing until combined and silky.

        Whipped Cream: In another bowl, whip the heavy cream until soft peaks form. Gently fold half of the whipped cream into the cream cheese mixture until fully incorporated. Then, carefully fold in the remaining whipped cream until no streaks remain.

          Assemble the Parfaits: In serving cups or glasses, layer about 1-2 tablespoons of the graham cracker mixture at the bottom. Scoop in a layer of the cream cheese mixture, followed by a layer of the cherry filling. Repeat this process until you reach the top of the glass, finishing with a dollop of the cream cheese mixture.

            Chill: Cover the parfaits with plastic wrap and refrigerate for at least 2 hours (or overnight) to allow the flavors to meld and the layers to set.

              Serve: Before serving, garnish each parfait with a few fresh cherry halves and a sprig of mint for decoration.
